Malay chicken curry"},"content":{"rendered":"<p>Though many people will not have the chance to escape to the coast this festive season, they can still enjoy the taste of the Cape with this Cape Malay chicken curry.<\/p>\n<p><span id=\"lblPrepTime\">Preparation time:<\/span> <span class=\"bold preptime\">20 minutes.<\/span><\/p><div class=\"stream-item stream-item-in-post stream-item-inline-post aligncenter\"><\/div>\n<p><span id=\"lblCookingTime\">Cooking time:<\/span> <span class=\"bold cooktime\">45 min<\/span>utes.<\/p>\n<p><strong>You will need:<\/strong><\/p><div class=\"stream-item stream-item-in-post stream-item-inline-post aligncenter\"><\/div>\n<p style=\"text-align: left\"><strong>For the spice mix:<\/strong><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">1 tsp of coriander seeds<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">1 tsp of cumin seeds<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">5 cardamom pods,crushed and outer husks removed<\/div>\n<div id=\"ingredientName\"><\/div>\n<div id=\"ingredientUnit\" style=\"text-align: left\"><\/div>\n<div class=\"clr\" style=\"text-align: left\"><strong>For the curry:<\/strong><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">1 Tbs of vegetable oil<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">12 chicken thigh and drumsticks pieces, bone-in and skin removed<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">1 onion, diced<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">1 clove of garlic, minced<\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">1 red chilli, seeds and membrane removed or 1\/2 teaspoon of red chilli flakes<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">2 tsp of garam masala<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">1 tsp of turmeric<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">2 cinnamon quills or sticks<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">2 tsp of freshly grated ginger<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">1 tsp of sugar<\/div>\n<div class=\"clr\"><\/div>\n<\/li>\n<li class=\"ingredient\">\n<div id=\"ingredientName\">400g tin of whole tomatoes, mulched<\/div>\n<\/li>\n<li class=\"ingredient\">\n<div class=\"clr\">250ml of coconut milk.<\/div>\n<\/li>\n<\/ul>\n<p><strong>You will then:<\/strong><\/p>\n<p><strong>For the spice mix:<\/strong><\/p>\n<p>Toast all the dry seeds together in a pan.<\/p>\n<p>Do not add any oil when frying as you want to natural oils of the spices to be released.<\/p>\n<p>When a slight dry smoke wafts up from the pan and you can smell the pungency of the spices, remove from the heat.<\/p>\n<p>Place the spices in a mortar and pestle and crush until fine or for a finer texture, mill in a coffee grinder.<\/p>\n<p><strong>For the curry:<\/strong><\/p>\n<p>Heat the oil in a frying pan and brown the chicken pieces in batches until they are well coloured on both sides.<\/p>\n<p>Season with salt and pepper, remove from the pan and set aside.<\/p>\n<p>Heat a little oil in the same pan and saut\u00e9 the onion and garlic until softened.<\/p>\n<p>This should take about 7 minutes.<\/p>\n<p>Add the chilli, garam masala, turmeric, cinnamon, ginger and sugar.<\/p>\n<p>Cook the spices and onions together for a minute or two and then deglaze the pan with a splash of water.<\/p>\n<p>Scrape the spice mix into a blender and blitz to form a paste.<\/p>\n<p>Add the chicken back into the pan and stir in the paste mixture.<\/p>\n<p>Cook for several minutes so that the spicy paste coats the chicken.<\/p>\n<p>Stir in the tomatoes and coconut milk.<\/p>\n<p>Place the lid on and simmer on a medium heat for approximately 35 -40 minutes.<\/p>\n<p>Taste and adjust the seasoning if necessary.<\/p>\n<p>To make the caramelized bananas, slice a just ripe, but slightly firm banana in half.<\/p>\n<p>Brush with melted butter and dunk, cut side down, into brown sugar.<\/p>\n<p>Caramelize in a hot pan until tender and sticky.<\/p>\n<p>Serve whole and scoop out as a topping for the curry.<\/p>\n<p>Serving suggestion: as with most curries, this Cape Malay curry
