{"id":58310,"date":"2014-04-21T08:30:00","date_gmt":"2014-04-21T06:30:00","guid":{"rendered":"http:\/\/germistoncitynews.co.za\/58310\/roast-lamb-with-spring-herb-crumbs\/"},"modified":"2014-04-21T08:49:04","modified_gmt":"2014-04-21T06:49:04","slug":"roast-lamb-with-spring-herb-crumbs","status":"publish","type":"post","link":"https:\/\/develop.citizen.co.za\/germiston-city-news\/news-headlines\/2014\/04\/21\/roast-lamb-with-spring-herb-crumbs\/","title":{"rendered":"Roast lamb with spring herb crumbs"},"content":{"rendered":"<p>Traditionally, lamb is served for dinner on Easter and the iron-rich dish is ideal to serve to family and friends.<\/p>\n<p>There are three parts to this recipe namely the crumbs, the lamb itself, and the gravy.<\/p><div class=\"stream-item stream-item-in-post stream-item-inline-post aligncenter\"><\/div>\n<p>For the crumbs you will need:<\/p>\n<ul>\n<li>\u00a0100g white bread.<\/li>\n<\/ul>\n<ul>\n<li>\u00a0Two garlic cloves.<\/li>\n<\/ul>\n<ul>\n<li>\u00a0The zest of one lemon.<\/li>\n<\/ul>\n<ul>\n<li>\u00a0One teaspoon of thyme leaf, chopped.<\/li>\n<\/ul>\n<ul>\n<li>\u00a0A small bunch parsley, chopped.<\/li>\n<\/ul>\n<p>For the lamb you will need:<\/p><div class=\"stream-item stream-item-in-post stream-item-inline-post aligncenter\"><\/div>\n<ul>\n<li>\u00a0Five carrots, cut into chunks.<\/li>\n<\/ul>\n<ul>\n<li>\u00a0Two onions, cut into chunks.<\/li>\n<\/ul>\n<ul>\n<li>\u00a0A small bunch rosemary.<\/li>\n<\/ul>\n<ul>\n<li>\u00a0Two tablespoons of olive oil.<\/li>\n<\/ul>\n<ul>\n<li>\u00a0A large leg of lamb, about 3kg.<\/li>\n<\/ul>\n<ul>\n<li>\u00a0Three garlic cloves, thickly sliced, plus a whole bulb, halved<\/li>\n<\/ul>\n<p>For the gravy you will need:<\/p>\n<ul>\n<li>Five tablespoons of plain flour.<\/li>\n<\/ul>\n<ul>\n<li>200ml white wine, plus a splash.<\/li>\n<\/ul>\n<ul>\n<li>\u00a0600ml lamb stock.<\/li>\n<\/ul>\n<p>What to do:<\/p>\n<p>Heat the oven to 160 degrees Celsius.<\/p>\n<p>For the lamb, scatter the vegetables, bay leaves and a few rosemary sprigs into a large roasting tin and drizzle with the olive oil.<\/p>\n<p>Use a sharp knife to make little slits all over the lamb. Place a slice of garlic and a small sprig of rosemary into each one.<\/p>\n<p>Sit the lamb on top of the vegetables in the roasting tin, add a splash of wine, then cook for two hours if you like it pink, or two hours and 15 minutes for cooked through. Remove from the oven, transfer to a board and cover with foil.<\/p>\n<p>Let the lamb rest for 45 minutes to an hour.<\/p>\n<p>To make the gravy, pour off most of the fat from the tin but leave the vegetables and any meat juices. Place the tin on the heat to caramelise the vegetables, then stir in the flour and cook to a paste.<\/p>\n<p>Gradually stir in the wine, cook for a minute, and then stir in the stock and simmer until you have a tasty gravy.
