There is nothing like some chocolate cake to treat yourself.<\/p>\n

This cake from Pharma Dynamics\u2019 Cooking from the Heart cookbook is so easy to bake and ideal for Mother\u2019s Day or to celebrate a birthday while in lockdown.<\/p>

For the cake you\u2019ll need:\u00a0<\/strong><\/p>\n

\u2022 3 cups (750 ml) of cake flour
\n\u2022 1\u00bc cups (310 ml) of sugar
\n\u2022 4 teaspoons (20 ml) of baking powder
\n\u2022 1 teaspoon (5 ml) of bicarbonate of soda
\n\u2022 6 tablespoons (90 ml) of cocoa
\n\u2022 2 cups (500 ml) hot water
\n\u2022 \u00bd cup (125 ml) buttermilk
\n\u2022 75 ml sunflower oil
\n\u2022 30 ml white grape vinegar
\n\u2022 2 teaspoons (10 ml) vanilla essence<\/p>

For the topping you\u2019ll need:\u00a0<\/strong><\/p>\n

\u2022 150 ml sugar
\n\u2022 300 ml water
\n\u2022 1 tablespoon (15 ml) soft tub margarine
\n\u2022 \u00bc cup (60 ml) cocoa
\n\u2022 \u00bd teaspoon (2.5 ml) vanilla essence
\n\u2022 3 tablespoon (45 ml) cornflour
\n\u2022 1 tablespoon (15 ml) grated chocolate<\/p>\n

Method:\u00a0<\/strong><\/p>\n

\u2022 Preheat oven to a 180\u00b0C and line a large rectangular (20x30cm) baking tin or oven dish with baking paper.<\/p>\n

\u2022 Sift all dry ingredients together. Mix the liquids together and gradually fold into the dry ingredients. Pour batter into tin or dish.<\/p>\n

\u2022 Bake for 20 to 25 minutes or until a skewer comes out clean. Remove from the tin and cool.<\/p>\n

\u2022 Topping: Meanwhile, place all the ingredients, except the chocolate, in a pot and stir over a low heat to dissolve the sugar.<\/p>\n

\u2022 Bring to the boil and simmer gently. Stir until the mixture thickens. Cool slightly and pour over the cooled cake. Sprinkle with grated chocolate.<\/p>\n
