This is proving helpful when deciding what type to buy for a specific dish.<\/p><div class=\"stream-item stream-item-in-post stream-item-inline-post aligncenter\"><\/div>\n<h3>WAXY<\/h3>\n<p><strong>(Cultivars include Mondial, Fabula and BP13)<\/strong><\/p>\n<p>Waxy potatoes have a high moisture content and a low starch content. During boiling, they stay firm and keep their shape, which makes them ideal for any dish where you don\u2019t want the potato to break up, such as a potato salad.<\/p><div class=\"stream-item stream-item-in-post stream-item-inline-post aligncenter\"><\/div>\n<p>They are not suitable for cooking in a microwave and not suitable for mashing. They can be used for chips but will make a \u201cslap\u201d chip and not a crisp chip.<\/p>\n<h3>Potato Salad<\/h3>\n<p><a href=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/07\/salad-recipes-hub.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-115438\" src=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/07\/salad-recipes-hub.jpg\" alt=\"salad-recipes-hub\" width=\"650\" height=\"370\" \/><\/a><\/p>\n<p>This potato salad is best when made the night before, allowing the flavours to mix.<\/p>\n<p>INGREDIENTS<\/p>\n<p>8 medium waxy potatoes, cooked and diced<br \/>\n1 \u00bd cups mayonnaise<br \/>\n2 Tblsp apple cider vinegar<br \/>\n1 Tblsp sugar<br \/>\n1 Tblsp Dijon mustard<br \/>\nsalt and pepper to taste<br \/>\n2 celery ribs, sliced<br \/>\n\u00bd cup finely chopped red onion<br \/>\n5 hard-boiled eggs, chopped<br \/>\ncayenne pepper<\/p>\n<p>METHOD<\/p>\n<ul>\n<li>Place diced cooked potatoes in a large bowl.<\/li>\n<li>Mix mayonnaise, vinegar, sugar, mustard, salt and pepper in another bowl.<\/li>\n<li>Add this mixture to the potatoes.<\/li>\n<li>Add celery and onions, mix well.<\/li>\n<li>Stir in chopped eggs.<\/li>\n<li>Sprinkle cayenne pepper on top before serving.<\/li>\n<\/ul>\n<h3>WAXY\/FLOURY<\/h3>\n<p><strong>(Cultivars include BP1, VDP, Fianna, Valor, and Sifra aka Bianca)<\/strong><\/p>\n<p>These potatoes are somewhat moist with a slightly floury texture. They retain their shape during cooking and can be used for all cooking methods. These are the variety most commonly available in supermarkets.<\/p>\n<h3>FLOURY<\/h3>\n<p><strong>(UTD \u2013 Up to Date, Caren, Darius and Avalanche)<\/strong><\/p>\n<p>This variety has a low moisture content and a high starch content. They do not retain their shape when boiled and are excellent for making mash. They also make the best chips and roast potatoes, which are crispy on the outside and soft and fluffy inside.<\/p>\n<p>Make sure the packaging says: Suitable for Mash or Baking.<\/p>\n<h3>Mash with garlic and parmesan<\/h3>\n<p><a href=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/07\/mash.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-115446\" src=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/07\/mash.png\" alt=\"mash\" width=\"640\" height=\"437\" \/><br \/>\n<\/a><\/p>\n<p>INGREDIENTS<\/p>\n<p>5-6 large floury potatoes, peeled and cut into chunks<br \/>\n\u00bd cup milk<br \/>\n2 Tblsp butter<br \/>\n1 tsp garlic salt<br \/>\n\u00bd \u00a0cup grated parmesan cheese<br \/>\n2 Tblsp fresh chives, chopped<br \/>\nsalt and pepper to taste<\/p>\n<p>METHOD<\/p>\n<ul>\n<li>Peel and dice potatoes.
