It is these phytochemicals that give fruits and vegetables their vibrant colour and some of their health properties.<\/p><div class=\"stream-item stream-item-in-post stream-item-inline-post aligncenter\"><\/div>\n<p><a href=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/06\/240_F_87291336_pA3OhMbDBsEapb9d3L125DV7ENecyzSe.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-111159\" src=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/06\/240_F_87291336_pA3OhMbDBsEapb9d3L125DV7ENecyzSe.jpg\" alt=\"240_F_87291336_pA3OhMbDBsEapb9d3L125DV7ENecyzSe\" width=\"913\" height=\"240\" \/><\/a><\/p>\n<p><span style=\"color: #ff0000\">RED<\/span><br \/>\n<span style=\"color: #000000\"> Red fruits and vegetables are coloured by a natural plant pigment called <span style=\"color: #ff0000\"><a style=\"color: #ff0000\" href=\"http:\/\/www.webmd.com\/vitamins-supplements\/ingredientmono-554-lycopene.aspx?activeingredientid=554&amp;\" target=\"_blank\">lycopene<\/a><\/span>. Lycopene is a powerful antioxidant that can help reduce the risk of cancer and keep our hearts healthy.<\/span><\/p><div class=\"stream-item stream-item-in-post stream-item-inline-post aligncenter\"><\/div>\n<p><span style=\"color: #800080\">PURPLE\u00a0\/BLUE<\/span><br \/>\n<span style=\"color: #000000\"> The plant pigment <span style=\"color: #ff0000\"><a style=\"color: #ff0000\" href=\"http:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC1082903\/\" target=\"_blank\">anthocyanin<\/a><\/span> is what gives blue\/purple fruits and vegetables their distinctive colour. Anthocyanin also has antioxidant properties that protect cells from damage and can help reduce the risk of cancer, stroke and heart disease.<\/span><\/p>\n<p><span style=\"color: #ff6600\">ORANGE\/YELLOW<\/span><br \/>\n<span style=\"color: #000000\"><span style=\"color: #ff0000\"> <a style=\"color: #ff0000\" href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/12134711\" target=\"_blank\">Carotenoids<\/a><\/span> give this group their vibrant colour. A well-known carotenoid called Betacarotene is found in sweet potatoes, pumpkins and carrots. It is converted to vitamin A, which helps maintain healthy mucous membranes and healthy eyes. Another carotenoid called lutein is stored in the eye and has been found to prevent cataracts and age-related macular degeneration, which can lead to blindness.<\/span><\/p>\n<p><span style=\"color: #008000\">GREEN<\/span><br \/>\n<span style=\"color: #008000\"><span style=\"color: #000000\"> Green vegetables contain a range of phytochemicals including carotenoids, <span style=\"color: #ff0000\"><a style=\"color: #ff0000\" href=\"http:\/\/www.livestrong.com\/article\/549673-what-foods-are-high-in-indoles\/\" target=\"_blank\">indoles<\/a><\/span> and <span style=\"color: #ff0000\"><a style=\"color: #ff0000\" href=\"http:\/\/www.phytochemicals.info\/phytochemicals\/saponins.php\" target=\"_blank\">saponins<\/a><\/span>, all of which have anti-cancer properties. Leafy greens such as spinach and broccoli are also excellent sources of<\/span> <span style=\"color: #ff0000\"><a style=\"color: #ff0000\" href=\"https:\/\/ods.od.nih.gov\/factsheets\/Folate-HealthProfessional\/\" target=\"_blank\">folate<\/a><\/span>.<\/span><\/p>\n<p><span style=\"color: #73390f\">BROWN\/WHITE<\/span><br \/>\n<span style=\"color: #000000\"> White fruits and vegetables contain a range of health-promoting phytochemicals such as <span style=\"color: #ff0000\"><a style=\"color: #ff0000\" href=\"http:\/\/www.allicinfacts.com\/about-allicin\/what-is-allicin\/\" target=\"_blank\">allicin<\/a><\/span> (found in garlic) which is known for its antiviral and antibacterial properties.
