INGREDIENTS<\/p>\n

1 chicken, cut into pieces<\/p>

<\/div>\n

2 onions, chopped<\/p>\n

3 cloves garlic, crushed<\/p>

<\/div>\n

1 bunch fresh coriander, chopped<\/p>\n

1 bunch fresh parsley, chopped<\/p>\n

juice of 1 lemon<\/p>\n

\u00bd tsp ground cinnamon<\/p>\n

\u00bd \u00a0tsp ground ginger<\/p>\n

1 tsp paprika<\/p>\n

1 preserved lemon<\/a><\/p>\n

200g green olives, destoned<\/p>\n

salt and\u00a0pepper to taste<\/p>\n

3 Tbls olive oil<\/p>\n

METHOD<\/p>\n

In a large saucepan, saut\u00e9 the onion with olive oil for about 5 minutes. Add the chicken pieces and brown evenly.<\/p>\n

After 10 minutes add the garlic, half the coriander, half the parsley, salt and pepper. Stir and let the flavours combine. Add the lemon juice, cinnamon, paprika and olives.<\/p>\n

Cover and cook over a low heat for 30 minutes, adding a little hot water if necessary.<\/p>\n

Sprinkle the rest of the coriander and parsley over the chicken and serve with preserved lemon and couscous.<\/p>\n
