Its effect is to balance taste and round out the overall flavour of a dish.<\/p>\n<p>Glutamate\u00a0has a long history in cooking. Fermented fish sauces (garum), which are rich in glutamate, were used widely in ancient Rome,\u00a0fermented barley sauces (murri) rich in glutamate were used in medieval Byzantine and Arab\u00a0cuisine,\u00a0and fermented fish sauces and soy sauces\u00a0have histories going back to the 3rd century in China. In the late 1800s, famous French chef Auguste Escoffier created dishes that combined the five tastes without knowing the science behind umami.<\/p>\n<h2>Salty<\/h2>\n<p><a href=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/02\/salt.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-94438\" src=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/02\/salt.jpg\" alt=\"Fleur de Sel Decamargue; Sea Salt\" width=\"640\" height=\"426\" \/><\/a><\/p>\n<p>Adding a few flakes of salt\u00a0to a recipe isn&#8217;t just about adding saltiness; it&#8217;s a flavour enhancer, so when\u00a0you \u201csalt to taste\u201d, it also coaxes\u00a0out low-lying aromas and flavours.\u00a0It can also balance unwanted bitterness in a\u00a0dish.<\/p>\n<h2>Bitter<\/h2>\n<p><a href=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/02\/curly-endive1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-94597\" src=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/02\/curly-endive1.jpg\" alt=\"Curly endive on tea towel\" width=\"640\" height=\"413\" \/><\/a><\/p>\n<p>Although we all have different tolerances, people tend to be sensitive to bitterness. Bitterness helps to balance any cloying sweetness.\u00a0Great ingredients to add a bitter taste are horseradish, rocket, endive, radicchio and dark chocolate.\u00a0Chicory is the common name in the United States for <strong>curly endive<\/strong>.\u00a0These two closely related species are often confused.<\/p>\n<h2>Sweet<\/h2>\n<p><a href=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/02\/nog-honey.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-94439\" src=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/02\/nog-honey.jpg\" alt=\"Honey dipper with fresh honey; jar with honeycomb\" width=\"640\" height=\"535\" \/><\/a><\/p>\n<p>Like salt, sweet flavours are good at giving a savoury dish more depth.\u00a0If a dish is too sugary, sour ingredients like lemon juice and vinegar will cut through and brighten the sweetness.\u00a0Use sweet ingredients to take the edge off dishes that are too bitter.\u00a0Other ingredients to use as an alternative to sugar are\u00a0<strong>honey<\/strong>, fruit, and golden syrup.<\/p>\n<h2>Sour<\/h2>\n<p><a href=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/02\/lime.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-94446\" src=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/02\/lime.jpg\" alt=\"Lime fruits infront of bowl\" width=\"640\" height=\"427\" \/><\/a><\/p>\n<p>This is another flavour that has a reputation for being hard to swallow, but even the smallest addition of a sour ingredient, like a burst of lemon or <strong>lime<\/strong>, a splash of vinegar, or a swirl of cr\u00e8me fra\u00eeche, can brighten up a dish.
