We should be seeking out the shade and eating foods that keep us cool.<\/p>\n<p>Eating large meals sends blood to the stomach to help aid the digestion process. But in hot weather, it is better to have blood close to the surface of the skin to aid cooling through the evaporation of perspiration. Served cold but with a definite kick, this Thai-style dish is certainly more appropriate for temperatures hovering around the 40s than pap and wors. (Serves 4)<\/p>\n<p>1 tsp Sriracha chilli sauce<\/p>\n<p>4 tbsp fish sauce<\/p>\n<p>1 tsp grated ginger<\/p>\n<p>1 tsp granulated golden sugar<\/p>\n<p>Juice of 1 lime<\/p>\n<p>750g watermelon, cut into 3cm cubes<\/p>\n<p>200g cucumber, peeled and cut into pound-coin-thick crescents<\/p>\n<p>1 birdseye chilli, finely sliced<\/p>\n<p>10g fresh mint, rolled and chopped<\/p>\n<p>10g fresh basil, torn<\/p>\n<p>25g toasted and roughly chopped salted peanuts<\/p>\n<p>Ensure your ingredients are fridge-cold before preparing the salad. Mix the chilli sauce, fish sauce, ginger, sugar and lime juice in the base of a large mixing bowl. Add the watermelon, cucumber and chilli. Toss gently but well to ensure the fruit and vegetables are well coated. Let this sit in the fridge for a few minutes. Add three-quarters of the herbs and peanuts. Mix well and serve immediately, with the remaining herbs and nuts scattered over the top. Serve with salmon.<\/p>\n<p>&nbsp;<\/p>\n<h2><strong>Salted Lemonade<\/strong><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-91441\" src=\"https:\/\/albertonrecord.co.za\/wp-content\/uploads\/sites\/35\/2016\/01\/lemonade.jpg\" alt=\"\u00a9 Copyright 2010 CorbisCorporation\" width=\"248\" height=\"373\" \/><\/p>\n<p>1 litre water<\/p>\n<p>2 lemons, juiced<\/p>\n<p>2 tsp granulated sugar<\/p>\n<p>\u00bd tsp Himalayan rock salt<\/p>\n<p>2 stems fresh mint<\/p>\n<p>1 lime, cut into wedges<\/p>\n<p>Stir the first four ingredients until the sugar and salt has dissolved. Taste for acidity \u2013 add more sugar if necessary. Add the fresh mint and chill. Serve with a wedge of lime.<\/p>\n<h2><strong>Sumac, yoghurt and mint dip<\/strong><\/h2>\n<p>150g Greek yoghurt<\/p>\n<p>30g extra virgin olive oil<\/p>\n<p>\u00bd a lemon, juiced<\/p>\n<p>Small bunch of fresh mint, finely chopped<\/p>\n<p>\u00bd clove garlic, crushed<\/p>\n<p>Sea salt and pepper, to season<\/p>\n<p>1 tsp sumac<\/p>\n<p>Mix all the ingredients except the sumac. Just before serving, drizzle with more olive oil and sprinkle with sumac.
