{"id":105164,"date":"2015-12-13T07:00:20","date_gmt":"2015-12-13T05:00:20","guid":{"rendered":"http:\/\/germistoncitynews.co.za\/?p=105164"},"modified":"2015-11-19T12:43:51","modified_gmt":"2015-11-19T10:43:51","slug":"summer-christmas-salads","status":"publish","type":"post","link":"https:\/\/develop.citizen.co.za\/germiston-city-news\/lifestyle-news\/2015\/12\/13\/summer-christmas-salads\/","title":{"rendered":"Summer Christmas salads"},"content":{"rendered":"<p>When choosing a salad, look for salads that will complement your recipes and also cut through the richness of the dishes.<\/p>\n<p><b>Avocado and potato salad<\/b><br \/>\nGive the humble potato salad a makeover with fresh avocado, lime and dill.<\/p><div class=\"stream-item stream-item-in-post stream-item-inline-post aligncenter\"><\/div>\n<p><b>You will need:<\/b><br \/>\n* 150 grams green beans, trimmed.<br \/>\n* 150 grams butter beans.<br \/>\n* 800 grams potatoes.<br \/>\n* 100 grams sliced bacon.<br \/>\n* Two avocados, halved, stones removed, peeled, sliced.<br \/>\n* A third of a cup mayonnaise.<br \/>\n* One large lime, rind finely grated, juiced.<br \/>\n* A third of a cup dill sprigs.<\/p>\n<p><b>What to do:<\/b><br \/>\nBring a large pot of salted water to the boil. Add green beans and butter beans. Cook for three minutes or until bright green and tender. Using a slotted spoon, transfer to a colander and rinse under cold water then pat dry with paper towel. Return water to the boil.<br \/>\nAdd potatoes to saucepan and cook for 12 minutes or until just tender. Drain and set aside to cool slightly. Cut in half lengthways.<br \/>\nPreheat oven on a high heat. Place the bacon on a baking tray and cook for five minutes or until crisp. Drain on paper towel. Tear into small pieces.<br \/>\nArrange beans, potatoes, bacon and avocado on a platter. Combine mayonnaise, lime rind and on and a half tablespoons lime juice in a bowl. Pour dressing over salad.
